There's something to be said for the original smoker used in the heart of salmon country in Alaska and the Pacific Northwest. Since 1968, the Little Chief has been smoking fish, jerky, sausage, cheeses and everything else man can think of to smoke. Today, the Little Chief is as popular as it ever was because it simply produces great results. What more could you ask for unless you prefer to wrestle with your smoker trying to dial in fluctuating temperatures, dealing with wood that won't smoke, and wondering why the wi-fi techy Bluetooth thing just won't flippin' work! Forget all that hassle and stick with what works... and has been proven to work for over 50 years.

The Little Chief will give you a consistent low temperature (165 degrees Fahrenheit) that you need to smoke foods. This way you never have to worry that your temperature shot up and you're now cooking and ruining your expensive, well earned batch of salmon or jerky. Keep it simple so you have more time to put your feet up, watch the smoke barrel out of your smoker, and tell your friends your best new jokes.

Here's even more ways the Little Chief makes smoking simple. First it just plugs into a standard household outlet (use an outside one of course). Next, once you have your food loaded in the smoker on the easily removable easy-slide chrome plated grills, you can close the door and access your wood flavor pan without ever opening the door again. The wood flavor pan can be inserted and removed without losing any heat or dealing with fluctuating temps. Just choose your favorite flavor of Smokehouse Wood Chips and you're guaranteed to be getting an amazing amount of smoke... even with the smoker temperature at just 165 degrees!

If you're wondering what all you can smoke in a Little Chief, well here is a short list of what you can do because the possibilities are endless... salmon, trout, other fish, jerky, sausage, turkey, bacon, hams, steaks, ribs, pork butts, brisket, fruits, nuts, and cheeses. The Little Chief is even used by native tribes in the heart of Alaska to get that traditional smoked flavor.  Just remember when smoking those large meats like a pork butt or a brisket, you'll smoke it thoroughly in the Little Chief and then finish the meat off in an oven or on a grill to get to that target internal temperature... everything else you can continue to dehydrate in the Little Chief until you reach the flavor you want.

Great at hot smoking salmon -- with some drawbacks

Good value for the money. It does what it's made for.
I smoked 1/2 of king salmon over the Labor Day weekend. The color came out great. I used the dry cure method by Alton Brown so the meat came out on the salty side. So I spread honey & sprinkle pepper on it and put it in the oven at 120F for 2 hours. That reduced the saltiness. For next cook, I'll try the wet brine method.
Now the negative sides and improvements.
One. It took a long while to come up to 150F. Longer than it took to fininsh a six-pack Then the temp climbed to 180F and stay there.
I went through 4 pans full of the fine wood chips that came with it.
Once the wood chips are hot enough, all of them would smolder. So you get tons of white smoke, temperature goes up, then no more smoke in less than 1 hour. Then I had to add more of those fine wood chips. And repeat.
For next cook, I plan to use a 6 inch cast iron pan, and bigger wood chips. I think the cast iron pan will get hotter and char the bigger chips and keep them smoker longer and more consistent.
Second negative is the door. It's flimsy and a hassle to remove and put back. There are large gaps on the side. The handle should be at the upper half, not at the bottom.
Third negative is the power plug. There is no adjustment. I'm going to mod it using the knob from an old electric burner.

It's good but...

I really like using my smoker, but there are a couple of drawbacks-
1. Power cord- it's a polarized plug, IEC60320 C15 cord. It looks like a computer power supply cable, but its not. So if you are a techie, don't intermingle that cord with your other cords. It's at least a 10A rated cord.
2. Find yourself a few more 12x12 cooling racks. 4 are not enough. I find that having at least 2 more is handy to be able to rotate throughout my smoking session. I will take racks out when smaller peices are done and put the thicker pieces on a new rack and back in the smoker.

Outstanding Product--Quality and Effective!

Like many reviewers here, I've had my Little Chief for going on 30 years. It is simply a great tool to use for smoking meats, fish, cheeses, vegetables--you name it. Yes, I have a fancy pellet grill, a Green Egg, a fancy gas built-in barbecue--even a pizza oven--but I love working with my Little Chief. It produces a consistent product every time I use it, and is by far the best value of any smoking/cooking device I own.
