Use a Good, Stiff Fillet Knife to Fillet a Salmon
It is important to use a good, stiff fillet knife to fillet your salmon when preparing to make smoked salmon. For a knife similar to the one in this video, try the Victorinox 40133 breaking knife. This knife is similar to the Forschner knife that is used in this video, since this model is no longer made.
