The Jerky Gun comes with two stainless steel tips also, so you have the choice of round jerky sticks or flat jerky strips. Hi Ken, the temperature of the Little Chief is around 165 F (depending on the outside temps). At this temperature we do the jerky strips for about 4-6 hours depending on the texture we want for that particular batch.
