SAUSAGE SKILLET ON THE MIMI MOTO
A one-skillet meal that goes together in just a few minutes is the answer to feeding hungry campers or the family on a busy weeknight. Relying on many already prepared or partially cooked ingredients, this Sausage Skillet cooks up quickly with little effort on the Mimi Moto. The Smokehouse Mimi Moto is a powerful cooking stove that can burn any biomass, including wood sticks found in the back country. For the greatest efficiency and consistency, it's recommended to burn Smokehouse Pellets. Smokehouse Wood Chunks can also be used but will yield a lower BTU.
INGREDIENTS:
2 Pounds Kielbasa Sausage (if looking to save time, you can buy pre-cooked)
5 - 6 Red Potatoes, Pre-Cooked and Chopped
2 Tablespoons Olive Oil
1 Small Red Onion, Diced
1 Cup Chopped Bell Pepper
2 Tablespoons Minced Garlic
1 Cup Saurekraut
2 Tablespoons German or Spicy Mustard
1/2 Teaspoon Paprika
1/2 Teaspoon Black Pepper
Salt to taste
Fresh Parsley for Garnish
Smokehouse BBQ Pellets (any flavor)
DIRECTIONS:
Place Smokehouse BBQ Pellets in the small burn chamber to fill line.
Ignite pellets using small pieces of wood and lighting fluid, some kind of fire starter, or a blow torch.
Once the fire is ignited, turn the knob to 4 or to max, and preheat a large cast iron skillet.
Add olive oil, onions, peppers and garlic to the skillet and saute for 4 - 6 minutes.
Chop kielbasa and add to skillet. Saute until warmed or thoroughly cooked. Add sauerkraut, mustard, paprika and pepper.
Saute 1 - 2 minutes. Gently stir in pre-cooked potatoes and cook to desired temperature.
Garnish with chopped fresh parsley and serve immediately.

Diffuser Note: Although the Mimi Moto can be cooked on without the use of the diffuser, with this accessory the heat of the stove is more manageable and uniform.
